Guacamole Deviled Eggs

Seven years I ago I made deviled eggs for the very first time and, I was lucky to have a batch of eggs that just didn’t peel well. You know when the egg whites stick to the shell? Not fun.  I swore that I’d never make deviled eggs again, and I upheld that promise… until today. I was tasked to bring an appy to tonight’s party and I felt like getting creative. Eggs and avocado are a marriage made in heaven and here’s another way they can come out to play. Besides, I’ll take nearly any opportunity to make something with avocado!

Guacamole Deviled Eggs

Ingredients
  1. 12 eggs, hard boiled and peeled
  2. 1 medium avocado
  3. 1 tomato, diced
  4. Salt + pepper to taste
  5. Juice of ~1/2 lime
  6. Garlic powder
  7. 1/2 cup cilantro, chopped (optional)
  8. Sprinkle of paprika to serve
Instructions
  1. Cut eggs in half with a sharp knife. Scoop out the yolks and put into a mixing bowl.
  2. Mash the avocado with yolks, lime juice, garlic, salt and pepper. Add tomato and cilantro.
  3. Spoon a generous amount of 'yolk mix' onto each egg white (ie. as much as the egg can hold 😉 If there's extra, enjoy on it's own.
