Ham, Yam & Coconut Soup

I made this soup on the first Sunday in January- and it’s cold outside! Nothing like a warm, nourishing soup to on a cold day. I used leftover ham from Christmas in this recipe. Pretty sure it would be delicious without the ham as well. Feel free to add extra veggies- turnip, zucchini, sweet potato… Be creative!

Ingredients
  1. 1 onion, diced
  2. 2 cloves garlic, chopped finely
  3. 3 stalks celery diced,
  4. 2 tbsp. coconut oil
  5. 1 large yam, diced
  6. 2 cups cooked ham, diced
  7. 1 soup cube (or season yourself)
  8. 1 can full fat coconut milk
  9. Parsley (for seasoning)
  10. 6 cups water
  11. Salt & pepper to taste
Instructions
  1. Saute veggies in oil in a large saucepan.
  2. Add water, soup cubes.
  3. Bring to a boil, then let simmer until veggies are soft. Add parsley, and other seasoning (Thyme goes well too).
  4. Before serving, add in coconut milk and ham. Heat and serve!
Notes
  1. You can, of course, go crazy and add more veggies. Turnips, cabbage, carrots... Go nuts!
