I made this soup on the first Sunday in January- and it’s cold outside! Nothing like a warm, nourishing soup to on a cold day. I used leftover ham from Christmas in this recipe. Pretty sure it would be delicious without the ham as well. Feel free to add extra veggies- turnip, zucchini, sweet potato… Be creative!

Ham, Yam & Coconut Soup

Ingredients
- 1 onion, diced
- 2 cloves garlic, chopped finely
- 3 stalks celery diced,
- 2 tbsp. coconut oil
- 1 large yam, diced
- 2 cups cooked ham, diced
- 1 soup cube (or season yourself)
- 1 can full fat coconut milk
- Parsley (for seasoning)
- 6 cups water
- Salt & pepper to taste
Instructions
- Saute veggies in oil in a large saucepan.
- Add water, soup cubes.
- Bring to a boil, then let simmer until veggies are soft. Add parsley, and other seasoning (Thyme goes well too).
- Before serving, add in coconut milk and ham. Heat and serve!
Notes
- You can, of course, go crazy and add more veggies. Turnips, cabbage, carrots... Go nuts!
